Punting (various companies)
Cambridge is renowned for its' punting industry! This is the practice of taking small boats (punts) and cruising along the river with a long pole. It's not an easy skill, as you have to balance yourself on a small and increasingly slippery platform.
You can find many hire companies dotted along the river Cam, with the 'Quayside' and 'Millpond' becoming hotspots in the summer. Also, they can often provide chauffeur trips at an extra cost. Don't be afraid to haggle with the touts, of which there are many.
The River Cam
Especially at the 'Quayside' in town and by the 'Millpond' / Silver Street.

Cambridge Trishaw Tours
A new (depending on when you read this!) introduction to Cambridge - Trishaws are essentially large three (tri) wheeled bicycles with a carriage providing seating for two. Kick back and let the tour guide sweat.
You can also find Trishaw taxis in the centre of town.
